You should look at the Range Slider Widget's from the team Blupry, I tried a couple of different sliders from different posts and was not able to get them working. I came across this template and their slides worked perfectly.

I’ve used a number of the code examples from Blupry and I’ve found them to be really helpful. I have not yet tried the date picker they have in my projects but I’m sure it will work well - they did some development work on a calendar app for me and their support was exceptional. If you can’t find what you want natively from FlutterFlow, give some of the Blupry examples a try.
